Why do I see different results on each server?

That’s normal while the change propagates: each DNS server refreshes its cache at a different time. Once all servers show the same value, propagation is complete.

What does a DNS record’s TTL mean?

It’s the time (in seconds) a server caches a record before querying it again. A low TTL (300s) propagates faster; a high TTL (86400s) is more efficient but updates more slowly.
